It’s a fusion of two beloved traditions: the airy, delicate choux pastry of France and the almond-filled richness of Sweden’s iconic semla. The result? What Is Choumla?

Think of it as the love child of a French éclair and a Swedish semla. Instead of the traditional bun, we use a gluten-free choux pastry — light, crisp, and perfectly golden. It’s then filled with a smooth, velvety almond cream that brings in the comforting flavors of a classic semla but in a refined, airy texture. Swedish semlor have been enjoyed for centuries, typically served after the New Year till Fettisdagen (Shrove Tuesday). Meanwhile, French choux pastry has been a staple in fine patisseries since the 16th century. With Choumla, we wanted to bring together the best of both worlds — the airy texture of choux with the almond-forward, cozy flavors of semla. The result is a pastry that feels both nostalgic and refreshingly new.
